Macklemore is talking about how he would like to be the mainstream rapper (the suave guy, who can get any girl and whatever he wants) but he chooses to stand for something more than girls and money, so he doesn’t turn into Uncle Sam’s bitch (a person who conforms to capitalism and only cares about money/wealth etc.)
“Dubs” is a reference to 20-inch rims which accords with the reference to a Cadillac.
