Easter Sunday falls between March 22 and April 25, changing every year. Likewise, people change between who they claim to be and who they really are. They put on an outfit to go to church, then put on another one and go through their lives sinning. The outfit is part of the lie they try to advance through their image.
Moreover, this first line may also refer to Thomas the Apostle after the resurrection. The holiday now celebrated as Easter is, according to the story, the anniversary of Jesus' resurrection. Upon hearing the rumors, Thomas refused to believe them and demanded to touch Jesus' wounds before being convinced. After doing just that, Thomas confirms Jesus' resurrection (i.e- “changed like Easter Sunday”). (Also, this is where the phrase “Doubting Thomas” originates from)
