Ingredients
1-1/2 cupsprepared hummussee savings
4 large flour tortillas (at least 12-inch diameter)see savings
1 cupshredded reduced-fat pepper Monterey Jack cheese
1 cupchopped red bell peppersee savings
1 cupshredded carrotssee savings
3 baby cucumbers, thinly slicedsee savings
2 scallions (white and green parts), choppedsee savings
2 tomatoes, thinly slicedsee savings
2 cupsshredded romaine lettucesee savings

Directions
1. For each wrap, spread hummus over top 2/3 of a tortilla. Layer on cheese, peppers, carrots, cucumbers, scallions, tomatoes, and lettuce in a row in the center
2. Compress filling slightly, and then fold the bottom of the tortilla over the filling. Fold in about 1 inch of the sides and roll firmly away from you, compressing the filling as you roll
3. Cut each wrap in half on a diagonal

Tip:
If you can't find baby cucumbers, use 1/3 of a peeled English cucumber (the long, skinny variety shrink-wrapped in plastic at the supermarket)
