In The Matrix, Neo (often referred to prophetically called “The One” in the film), could manipulate the Matrix to his will more so than other occupants where he can dodge bullets with ease.
To “dodge a bullet” means to avoid a particularly bad situation, which would be her if he chose to stay with her.
There’s also some wordplay with these bars, where Add-2 plays on the antonyms right / left and emphasizes the “bull” in bullet to play off the previous line detailing a matador avoiding bullshit.
