There’s been debate over Arya’s reaction here, but her true motives shine through when she takes his coin purse.
The Hound just admitted he’s trying to protect Arya and has saved her life/taught her things along their trip. However, Arya can’t get past their interaction with the farmer earlier in the season. The Hound knocked him out and stole his silver, so Arya is just returning the favor.

The Hound didn’t make himself out as Arya’s savior– quite the opposite. He reminded her of the horrors he’d done in hope of making her angry enough to kill him (and failed).
