People who are guided by one religion, believe that their religion is the truth. Since money is Joey’s religion, it is also what he believes is the truth. So, his money being better than his jeans probably refers to how you can’t realize how much money he’s got just from his clothing style — he’s got way more money than he looks like he’s got.

There is also an allusion to the True Religion brand of jeans, which is very popular today, in this line.
