His man called, said: "your time might be now
They played your freestyle over 'Wipe Me Down'
They played it 2 times, say it might be crowned
As the best thing out the H-town in a while"
Hip-hop Saved My Life by Lupe Fiasco

Our protagonist’s friend phoned him up and told him ‘they’, the radio, played his freestyle a couple of times over this beat, a pretty generic, radio-friendly instrumental

The radio have hailed this freestyle as one of the best things Houston hip hop has produced in some time

Told her when he get on he gon' take her to the Galleria
And buy everything but the mannequins, ya dig?
Hip-hop Saved My Life by Lupe Fiasco

In the previous line he talks about driving up to Dallas and there’s a Galleria mall in Dallas and it’s considered to be one of the most expensive malls in America so when he says buy everything but the mannequins he’s showing her how much money he’s finally made.

The protagonist is from Houston, and the Galleria reference must be that, when he makes it big and becomes rich he will take her to the Galleria in Houston and buy her everything. This makes more sense then going back to Dallas to go to a mall, especially with all of the other Houston references in the song, including “Best thing out of H-town” and taking his momma out of the hood and putting her in the woods, e.g. the Woodlands, a fancy suburb of Houston.

Down baby-momma, who he really had to honor
Cause she was his biggest fan, even let him use her Honda to
Drive up to Dallas, went to open up for amateurs
Let him keep a debit card so he could put gas in it

Respect to his girl, who always kept faith in him, and financially supported our man e.g giving him a ride and gas money so he could support some dudes in Dallas

Minute Maid got his momma working like a slave Hip-hop Saved My Life by Lupe Fiasco

Minute Maid is a company that manufactures fruit juices. The company has been exploiting the protagonist’s mother.

Alternatively, she may be working at Minute Maid park, the stadium where the Houston Astros play all of their home games. Menial labor for likely minimum wage, with little downtime.

Finally, it may be a reference to Minute Maid, a house cleaning service. This conjures the image of a house slave.

Minute Maid is a reference to maid service temp work, where you would have to work twelve hour days to survive. This is a reference to J-Z’s mom, who used to clean hotel rooms.

"Stack That Cheese" got 700 plays
Producer made him take it down, said he had to pay
Hip-hop Saved My Life by Lupe Fiasco

The rapper is generating some buzz, but the music industry is cruel, and the producer saw an opportunity to make money. Especially hurtful because it’s likely the same producer who conned him into buying the wack beat in the first place.
