Chance is referring about the whole song itself. It’s a mixture of his pure intent and his exotic taste in music (the fruit). The last line is a comparison to this song. Just like when someone drinks a really good juice, they get thirsty after a while and want to drink that juice again. Once people hear this song, they will literally want to listen to “Juice” again!

Chance also refers to people in general. Once they have the a taste of the “juice,” meaning the power, fame, respect, etc, they get thirsty again and can’t get enough of it.

Although Kipling here is talking about running, an activity so oddly specific it seems almost out of place in this poem full of general life advice, the two lines can be taken metaphorically: We only have a finite amount of time on Earth–“the unforgiving minute”–and we should use it to be the best we can.

I believe as another contributor has pointed out that the unforgiving minute speaks of any arbitrary minute, but to fill them up to the best of your abilities, to stay on task and to put everything you have into each fleeting moment; even as they seem to not matter, such as a mere minute.

The unforgiving minute is every minute, unforgiving as you can’t have them back, regardless of how much you wish you could.

I like the suggestion that time can be measured in two ways, by the ticking of the clock or by the ‘distance run’ (i.e. how much one achieves). A man who can outpace the clock will live more than a man who lets the clock make a fool of him, regardless of how long the two men spend on Earth.

To me “the unforgiving minute” refers to the last little bit of time before something horrible and unavoidable happens. Not an entire lifetime. And filling that unforgiving minute with 60 seconds worth of distance run means having the ability to do everything humanly possible to avert disaster (that impostor) even if your efforts ultimately prove futile.
