The shield refers to Captain America’s shield, specifically referencing the events from the Marvel Cinematic Universe (MCU). Throughout the movies, his shield becomes severely damaged to the point it’s no longer usable. Eventually, Black Panther, the ruler of the fictional African nation Wakanda, hands Captain America a new type of shield for him to use.

The “L.A. bitch” refers to Logan Paul who moved to Los Angeles to pursue a career as a media entertainer. KSI uses these lines to emphasize his superiority over Logan Paul.

Soldier: 76 is one of the heroes from the multiplayer, first-person-shooter game, Overwatch. KSI simply alludes to the name of the game to express how he sees everything. It is also a game that he has played on his YouTube channel.

Questlove (stylized as ?uestlove) is a prolific musician who has been the drummer and main record producer of popular hip hop band The Roots, ever since they first formed in 1987. If someone is not familiar with The Roots, then they are most likely not a fan of Questlove, so since that is the case, the narrator believes it is disingenuous for the subject to be wearing a Questlove hoodie.
