A folk remedy for a burn is to put butter on it.
The modern recommendation is clingfilm!
The Scottish-Lady is correct – butter was used to heal burns previously. This suggests a sadistic relationship between the speaker and the girl. He had hurt her, only to add/create a calming presence later on.

It is more like a pun or a reference- yes, butterfingered means clumsy, but the reference to the butter remedy shows just how awkward and wrong the speaker is.
