Apple and Macintosh are one in the same, if I’m not mistaken.
Nas was the pioneer of the Big APPLE’s rap, Big Pun claims to be a product of the “Nas Brand” (in this case, a Mac is the nickname for a Apple computer)
Earlier in his verse he mentions his “futuristic raps” which are state of the art. He mentions Nas, possibly implying that he is the one who got the ball rolling, and by the “turn an apple into macintosh” line he could be saying that he is taking NY rap to a whole different level (NY’s nick name is The Big Apple). An Apple in this case would be an old computer manufactured by Apple. So by this logic it could mean that he is turning an Apple (NY) into a future counterpart of itself (Macintosh which was a high end computer rolled out around that time.

It’s funny because nowadays nobody knows “Macintosh” anymore, everybody says “Mac”, and Apple is the iconic name.
For a coincidence Nas also refers to Pete Tosh McIntosh in Thief’s Theme.
