San Fermin’s lyricist/producer/visionary, Ellis Ludwig-Leone spent a lot of time alone in the Canadian Rockies conceiving this album. Mountain lions sightings are pretty rare in the Rockies and lions on “beaches of white” strike us as an abstract image. He’s dreaming or fantasizing.
Seems likely this is a reference to Old Man and The Sea by Hemingway?

It’s also a reference to The Old Man and The Sea by Ernest Hemingway. it is mentioned several times throughout the story that in his youth, Santiago saw “lions on the beaches in the evening” and beaches “so white they hurt your eyes”. The reference becomes even more clear with the next two lines as the narrator is found to be stuck adrift in the ocean, much like Santiago.

“See lions” here is a play on words that also implies “sea lions”. This makes sense as sea lions lie on “beaches of white”. Furthermore, the next couplet reads,
“I see men with their boats in the weather
Calving me as I drift in the night”
I see this as a metaphor of a whale (maybe?) being born into a dark stormy sea representing the relationship the man just left and him coming into a dark, stormy, emotional sea — a pretty persistent theme through this whole album.
