One of the many horrible stereotypes that the Jewish people have to live with is that they make great lawyers, so having one of them on your side is a status symbol. Also connects back to the beginning of the verse with the concentration camp reference. The two main things the average person associates with Jewish people: the Holocaust, and good lawyers. Playing on the stereotypes.
Vince is also joking that on his trial day, HE will be Jewish. If he is a Jew that keeps kosher, and the murder weapon was a “ruger with the pork face”, he couldn’t be guilty of the crime because Jews stay away from pork.
